In most cases AdSense pays more than other similar networks. It may be worth doing a brief test with another network though. In some cases they might have more relevant ads that generate more clicks.
Your ad placement seems alright to me. For longer pages it might be worth also putting an ad block near the bottom of the page.
With a niche like poultry, AdSense probably is your best alternative. I doubt there are any good affiliate programs to promote for this niche. Perhaps it is still worth looking into any farm related affiliate programs.
