I agree that the service is what counts, not how it's advertised. The term "unlimited" seems to have become the latest marketing rage among hosting companies.

As recently a 6 or so months ago, Bluehost was offering, IIRC, 500GB of storage and multi-terabytes of transfer capacity. For all practical purposes, that's "unlimited" for probably 95% or more of their customers.

I'm fairly sure that offering their service as "unlimited" started when they began to lose business to other hosting companies who were advertising their sites as unlimited.
