A lot of hunters do not process their own kills. They take them to shops that specialize in processing and packaging the meat.

Pure speculation from a cynic. It was not USDA inspected. USDA inspected means there is one inspector in a kill plant with 600 employees and 4 processing lines.

The neophyte thinks just because there is a USDA stamp on the meat that the inspector is looking at every piece of stamped meat. Just like Inspector 12 at the underwear factory looks at every pair of jockeys that goes down the line.

In which case I would much prefer even a one man processing shop who specializes in what he does.

I guess my family is in trouble since we have venison in our freezer from a couple of deer that Dave shot last season.

At the same time this is going on, in Montana, they are trying to pass a bill to make it legal to eat road kill.

Another point, I'd like to point out is that not only was the venison not "suitable" for human consumption but I guess donating it to an animal shelter was out of the question as well.
