To me it's the most uncomfortable thing in the world to deal with people like that. A year or so ago I would send people haggling like that to Homestead or something. With the economy the way it is I'm willing to be more diplomatic about it.
I still won't do spec work (like the lady at the hairdresser wanted) without a contract. I refer people wanting that kind of thing to the college. Let kids practice on them.
I've found that having them initial line by line on production and recurring costs helps avoid the haggling after the work is done (like the restaurant couple.)
But the biggest, most frequent one I get is "Do this cheap for me and I'll bring you lots of business in the future" (like the video store guy).
It's been my experience that the ones who haggle like this will almost without fail be the hardest to please, unhappiest, most complaining, most demanding customers you'll ever have. It's like they're afraid if they show any satisfaction you'll start raising the price on them.
So in a good economy I say let them all walk and use that time to concentrate on your good customers. But with the economy tanking the way it is and unlikely to get any better at least until after the 2010 elections, I'm not turning away much money these days.
