I'm glad to talk about Ireland actually, so thanks for asking the question.
If I was moving to Ireland, I would live in Galway. It's by the sea, but it's really trendy and diverse. If not Galway, I'd live farther out in or farther out in Connemara. The seafood from the area is delicious. It's also beautiful.
Also wanted to mention that people from Northern Ireland visit the ROI all the time and vice versa for shopping. It depends on which currency is strongest at the time (Euro vs. Pound).
When you guys visit, you'll notice this, but the weridest thing to me was that all the signs (road signs, store signs and what not) were in Gaelic. So don't be surprised when you go land in Dublin and you see signs saying "Baile Átha Cliath" (Dublin) or Oifig an Phoist (post office). It takes a minute to get used to.
Most people speak English there though, although they learn gaelic in primary school. It's also weird to watch the news. The give the majority of the news in English, but they give a rundown of the news in gaelic for gaelic speakers.
