301 with slightly different URL strings

I heard that Google picks up 301 quite well, but how does it work with mapping to different URL strings on a different domain?

For example,

Original:

www .original Website.com/Internet_Marketing/Optimization/URL_String/123

New:

www .new Website.com/internet-marketing/optimization/url-string/123

Doesn't really matter?

i think you can do some mod rewrite stuff to automatically convert underscores to hyphens if you are to do that across a large site.

you could also do it file by file and they will pick it up just fine.
