File -> Save optimized, or Save optimized as. In the next (popup) window you can set the type of file you want it to be.

There is only 2 options either save as .jpg or html. I'm confused.

yeah that sometimes happens, you'll need to paste the original frame into a new image and then edit from there.

You can select "GIF" via the Optimize Palette (Window -> Optimize) -> Format. I don't know why JPG is preselected in your case but, well, Image Ready is full of options :-)
