Help on business plan?

I knew I was going to have to think about and write down a solid business plan, but up till now it's all been speculation in my head.

Now I have to start thinking realistically and in more detail.
A lot of the details cannot be decided until I pin down the most important part - what I'm selling. I want to think about what services I'm prepared to offer, how much for, and who to.

I'd appreciate any help with these few questions to help me decide...

Now, I'd like lots of small projects without much need for flashy graphics, server-side scripts or online sales. However, excluding some of these projects would limit me.
Do you think I could find enough small projects to sustain my business?

How many projects do you take on at a time?

What are some appropriate time scales for projects?

Do you in your web design projects, charge for the project completion on a certain date with a rough hourly rate in mind, or charge by the hour but provide a quote/estimate as to when you will finish and how much it should cost? (Or other) And why do it that way?

What sort of hourly rate is appropriate?

How much do you in your projects decide to sub-contract parts of the project, and why?
