Delist product or mark it out of stock or other

Is it better to list a popular product out of stock or de list the item when an item is sold out and you can not repurchase an item until the end of the month.

Would you in this case mark item out of stock?
De list this item from the store?
or
Is there a better way of handling this situation?

You could show the item as out of stock and have an option for the customer to back order it.

only problem with taking orders is I do not know exactly what the price is going to be when the item is available. Purchasing prices change on these items.

In that case, I would go with the out of stock message so the customer knows you do carry the item. List the date the item will be available again and maybe an option where they can choose to be emailed when it's available.
