It need to be realy intresting like "A pregnent woman, santa clause and a smart blonde are in an elevator...click"
When I see something like this I realy would click :p.

But i've seen too many links like "make money", Im not clicking that.

Not very often, but if the anchor text was something unusual then I might do. Luckily most people don't expect too many clicks from signature links - they're normally after the SEO/PR benefit.

Once in a while, if the person makes an incredibly knowledgeable post I will follow the link to see if he has more knowledge I can gather.

Usually it helps to participate. If you're going to frequent one forum you might as well check out a couple others. It seems the most popular webmaster forums are all talking about similar topics that are fresh with whets going on today. Some of them, a little more stagnant. And its good PR for your sig as long as you don't make a fool of yourself. Feedback that offers something someone can actually use is always good for the community.

Almost always click on sig links -

If the post is related to web design / SEO advice it's a good way to judge whether someone practices what they preach.

Can also give a bit more insight on the type of person the poster is.

The only exceptions are if the sig link looks spammy - 'earn money....' etc

I click on them if I find them interesting. I get a few hits off of links. I do a lot better if I have a small explanation of what the link is.
