Interesting you say that. So if I were to get a .com.au domain for an australian website to target my local market, yet the actual website was hosted in the US, this could effect search engine rankings in google.com.au ?

it certainly could in some engines.
keep in mind that they also read links and can likely determine a regional specific type topic if it is well engrained into the local community of site, for example if many sites like aunic (or whatever its called) link to your site
having your address on the page can also help them out too from what I have been told.
also if you are in an area where the local search engines are super sketchy and the web is not built up strongly yet (like Africa) many people will likely search with the country or town in the search query
