Importance and power of anchor text:

Anchor Text Enhances the Relevance of the Target Page

The keywords in anchor text enhance the relevance of the target page pertaining to the keywords used. While the relevance of the page containing the anchor text is also enhanced to some degree (because of relevant keywords appearing on that page), the real gainer is the target page URL. By using this knowledge it will build the relevance of each page of the site, through optimized anchor text containing important keywords, relevant to the theme of such pages, from other pages of the site.

Search Engine Algorithms like Anchor Text.

The inclusion of important keywords in the anchor text can make a big difference in the final ranking of the site pages. All search engines that matter, give significant weight to the anchor text on pages. The fact that Google has a special operator: allinanchor:keyword', which picks up text only from within the anchor text of indexed pages.

as the diagram say

you can create one way door or direct to your site.... also using your keyword as your anchor text can also help your keywords rank on SERPs

And I believe it's a good command to analyze your competitors.

Yes that's true! But improper use of anchor text might harm target page due to it maybe considered as a spam.

In the issue of relevancy, will your site suffer from backlinks posted on irrelevant sites.
Like for example, having those "Organic Blueberries" as anchor text on an engineering blog?
