For Google one is enough - for other SE's it isn't. However, it can be difficult to submit to other SEs: you either can only submit a few at any particular time, have to pay for listing, or else have no control whatsoever as to what will be indexed anyway.
It may be a good idea to make a point of submitting your sitemap. That way, *if* the crawler(s) follows any further links, you have your entire site available.
However, there's too much generalisation here in this topic - for example, I wouldn't pay Inktomi to spider my sitemap, because it would possibly not follow the links unless paid to. However, without paying for it, Inktomi will spider a lot of static content.
Personally, I'd just worry about Google, and most of the other important engines will follow. And Google is easy to submit to.
On the other hand, a DMOZ link is a great way to put yourself before the spidering nation - but is not essential.
