Never cooked them that way, might have to try that combo though I've not had much luck frying that lean cut.
We slice them at about .5" and broil naked with S&P to med-well and the add a homemade ripe tomato chutney (a tomato, garlic, raisin, ginger, vinegar, sugar concoction).

Oh, right. I froze the extra cooked chops, and then today, thawed, sliced very thin and added some left over rice and veg's from last night. Tossed the rice and pork in a wok with just a touch of avocado oil so it doesn't get dried out.

We usually bake/broil.
I had a bagel w cream cheese from Timmy's.
Leftover chicken sandwiches today.

I find pork can be kind of a "bland" tasting meat, and although I'm not a big "fan" of mustard, adding the bit of honey rounds out the sharp taste of the mustard.
If you really like the taste of such a combination coating on the meat, just add a small bit of water to the pan after cooking the chops (once the pan has cooled down a bit), let simmer for a minute or less and you've got a bit of "gravy" to sprinkle over rice or vegies too.
Of course if you like to keep the tastes on a plate separate, then no gravy.
