All depends on your blog niche. We have few blogger in India, who earns good money from adsense. While some of other completely rely on affiliate ads. Some experts shows adsense is bad for your website or blog, because it redirects user to another website.
But it does not matters, because most of time adsense will show ads relevant to your niche. But if you a really great professional blog and have a loyal followers. You can choose affiliate over adsense, because study founds loyal followers buy affiliates products such as hosting, themes and plugins from the blogs.
But if your blog totally depends on organic traffic, go for adsense. Adsense is for those who have good traffic on the blog or website. Less traffic won't give you any money.

When is a good time to add adsense? I have several websites that pull over 10K organix traffic, but have not pushed out adsense while I was growing the site. I've been getting offers for guest posting so I'm thinking it might be a good time?

Many large sites run AdSense but they have the advantage of a very high traffic. Many bloggers say that the income from AdSense is minimal since a very high traffic is needed.
Alternative ad solutions might be Media.net, Infolinks, Adversal, Viglink.
Most importantly, why don't you start adding affiliate links from the most popular products in your current website and see what works better? You can also make your own digital products (convert multiple posts into ebooks) and sell them through your website or Amazon.

I recommend Google AdSense globally on my site along with affiliate marketing in separate posts with reviews of the affiliate item.

Adsense is easiest way to earn passive income online. You can make alot more with affiliate programs but adsense is simple and fast to setup.
It depends on your niche and how much traffic you get. If your topic has high paying ads you will do well with adsense if not no so much.

I think adsense is still a good way. AdSense is perhaps the easiest, more reliable and best way to make money online. Provided that your website meets the criteria explained above, you can enjoy a good monthly revenue by utilizing your content and the hours you spend online in the best possible way.

What is considered a high amount of traffic? 25K organic? 50K? 100K+?
What have you earned from Adsense at those levels? I know it depends, but was just curious.

AdSense position in display Ad market is considered as a monopoly. Chrome, at the moment, even blocks some kind of Ads. However, their criteria are strict and hard to get over and the market is widening day by day. Hence, the other Ad Network can be the alternative. Media.net for big publisher, PropellerAd for pop up, Taboola, Mgid for naive, inforlink and Sorvn for medium Pub, Realkai for small and new pub....that's all in my list
