what do they actually do?
do you have to use a special template?
or can you use any design?
if it's any design do you have yo insert code to define which content can be editable?

Content management system. Just about every piece of information from the links to the content comes directly or is entered directly into a database. As far as a special template.. yes to a degree. But xaraya is probably the best as far as being able to layout new designs - so it's not cookie cutter. As far as what is editable.. essentially it all is - depending on your authorization level. niceguyeddie can probably expound further on this.

so it's sort of a system for the end-user, like an alternative to getting a person to do the site for them?

how is the editing done?
- upload files?
- online interface?
- wysiwyg / code?

does it use a dbms or files as the db?
(does it interface with a dbms to get and put data, or does it save the data in files and manage it itself?)

yea makes it easy for somone u did the site for to update... however i presume u add this to the price total and my knowledge of CMS's is limited

Not really an alternative to having someone do it for them... there is still a need for custom "design" of a template.. installation and/or creation of custom modules.
Editing of what? Articles - if you're admin you click edit. If you wrote the story - click edit. If not one of those - you don't edit. If you mean editing templates - upload of files or through an online wysiwyg code editor (actually I'm not sure if they've brought this over from postnuke).
Uses a abstraction layer to use whatever db or flatfile you want to use.

ok the editing I was talking about is the owner or persont hat updates the pages, and adds more pages.
Yeah I was thinking most people would need help to design the visual templates and install it all.

what do you mean by "wysiwyg code"?
there's 3 ways I can think of editing a page (while on the page):
1) spefic areas of body text is changed into <taxtarea> for TEXT editing.
2) as (1) but for HTML editing
3) the page looks exactly as it does normally but the admins can still type ine the page and stuff.

I made a crude version of (3) that only worked in IE for a Uni project, it also had extensive CSS editing.
I've seen scripts that make (1) and (2) possible very easily.

The only bit I have not got much idea how to do is the bit where it is saved to the server, and is all made secure.
