Dreamweaver 8 help

Hi, I'm a Mac and Dreamweaver newbie who posted a rather urgent website with Dreamweaver before learning the ropes. Now, I'm trying to get things set up properly in a local directory without losing what's already on the web. Question, how can I assure the new site material doesn't overwrite the old before I'm ready to FTP it? Although the site is pointing to the "old local directly" everything I do in the new seems to be going to the remove server.
Another question. The CSS Edit box that floats above the main window in Dreamweaver keeps disappearing. What is this called in View and how do I get it back?

This seems to be a great program compared with Frontpage but I'm spending all my time chasing links due to the poor setup.

Well on your server you want to make a folder to put all the old files in. I usually call this folder "old."

Not sure what you are asking about the CSS thing and don't know if I could help you all that much as I use Dreamweaver MX.
