Best host for potentially needy noob?

Getting closer to going online, I'll have a few websites go up simultaneously or near simultaneously. One or two of these sites may grow to hundreds or thousands of visitors per day downloading free 50-75 page ebooks that will be in pdf format.

Being new to this and being an interested learner and a control freak, I'm doing my own websites and will put them up myself, but on the server side I'm going to need some help. So, I'm going to need a host that can allow me to upgrade quickly and easily if necessary and help me with support. Of course, cost is a concern, but if one host is better but a little more expensive, I'd probably opt for the host with better support.

Any advice appreciated.

I think that you can have a look at companies like Santrex.net. I mean the ones which offer all kinds of web hosting.

What sort of budget do you have? Do you have any preference as to whether it is windows or linux hosting?

I know nothing about Linux so would need Windows. As far as my needs. . .need handholding with set up, phone support, a patient person to teach me how to do something when doing it for the first time, scalability, ecommerce.

Budget isn't too much of an issue based on the prices I'm seeing. As I stated in my other thread that's also in this hosting forum, part of my problem is that I don't know what features are important/I should ask for.

I'm starting to think that while I don't need a dedicated server at this point, it might simplify things. . .dunno.
