a Guestbook, you dont have to register to post. So i say just simple posting a message would work.

Admin, delete, edit, add Messages. Maybe a way to mail everyone who signed the guest book.

admin: ip log, mass email, ip ban, delete, edit
user: add message, view messages, post without having to login, but be able to register a name so no one else can use it (if they want to), simple emoticons...

I'll give you more info (like you said) once I can see it running... then I might think of more.
