I really don't think there is a cold hard answer for you, I believe you answered it yourself with that there are about a million things to affect this, depending on what products you are selling, how well your prices are, etc, etc, there are thousands upon thousands of online stores out there with shopping carts...

I heard that about 60% of people, who added products to the cart, don't check out. But it largely depends on how the cart is setup and how the process is enjoyable by the visitor. Kind of weird to hear 'enjoyable' and 'shopping cart buying process' in once sentence, eh?

Amazon is said to have highest conversion rate. It is worth checking out how reputed ecomm companies had setup shopping cart. These companies invest huge sums towards research and implementation of every aspect of their websites.

tbh I use website shopping carts as list keeping tools for that shop's products I'm interested in. I do this on many shops at the same time, only one will get the sale and more often than not I'm only window shopping

Exactly. The more interesting statistic if one could track it would be what % of shoppers wind up buying either on that or a later visit. I almost never impulse buy. I guess I am a shopaholic. The larger the purchase, the more I shop.

And I never buy anything from a source that requires me to enter any personal info other than a zip code in order to get a price with S & H included. I am just not going to sit there and type it all in to find out the shipping charge.

Paypal allows for simple purchase by using login name and password. Most of the sites are paypal compliant, and as Scriptman said, uses only a couple of entries (username and password). Are there any other widely supported payment systems that work just like Paypal?

Yeah, The more data you have to enter the more chance you wont bother.

Save it till the final stage of the order process and make it as easy and transparent as possible. Many users resent giving any information about themselves especially when they don't consider it necessary or appropriate at the time!

Conversion rates vary to widely to put a number on it. However I do know of some great books on how to improve your conversion rates.

Persuasive on Copywriting
Web Copy that Sells
Don't Make Me Think (more usability, but it covers shopping carts)

Hope this helps!
